i kind of made this recipie up from one i saw in a cook book. i just tweaked it a bit to make it healthier. all the flavors just blend together so well. i usually use the frozen mahi mahi from trader joe's. my husband, larry, and my brother in law went deep sea fishing last weekend and brought home mahi mahi as well as some ahi. here's the recipie for the tacos.
Gail’s Fish Tacos
(or salad)
1 pound Mahi Mahi (frozen from Trader Joe’s is fine)
¼ cup tequila
¼ cup lime juice
½ teaspoon garlic powder
Marinate fish in tequila, lime and garlic powder for at least one hour. Grill over high heat. Cut fish into pieces small enough to work for tacos.
Sauce for Fish:
1 tablespoon olive oil
2 cloves garlic, finely chopped
½ jalapeno, finely chopped
¼ cup tequila
Salt and pepper
Juice of 1 lime.
Sauté garlic and jalapeno in olive oil unitl the garlic just starts to turn pale golden. Flame with tequila.
Pour garlic jalapeno sauce over fish. Squeeze the juice of 1 lime over the fish. Mix together.
Garnish: Shredded cabbage, avocado, pico de gallo, cilantro, and salsa crema.
Salsa Crema:
½ cup plain, non-fat yogurt (I like the greek from trader joe’s)
1 clove garlic, finely chopped
½ jalapeno, finely chopped
1 tablespoon pico de gallo
Lime juice (enough to make drizzling consistency)
Serve as tacos or as a salad. For salad, mix cabbage with mixed baby greens.
